Recipe of the Day (#2) (2.16.12) Mini Crustless Spinach Quiche

So, technically this is my second recipe post today but when I find good ones, I want to post them. In this case, there are two recipes - both look good and fairly healthy but one is just slightly healthier than the other. I say just make which one looks good to you!


Mini Crustless Spinach Quiches

Yield: 1 dozen quiches

Ingredients:
6 eggs
1/4 cup cream
8-oz frozen spinach (thawed, drained and squeezed dry)
1/3 of an onion, chopped
1/4 tsp nutmeg
1/2 cup of crumbled feta cheese
3 pieces cooked bacon, crumbled
Directions:
Preheat oven to 425. Saute onion and spinach until soft and fragrant. Mix together eggs, cream, bacon, nutmeg, and feta - add spinach onion mixture and mix everything together. Grease muffin tins. Fill each muffin cup 3/4 of the way to the top. Bake for 25-30 minutes or until set. Enjoy!!
